As the wort is collected in the FV, yeast is added. Yeast is a single-celled plant organism which ferments sugar, turning it into 5 basic products- more yeast cells, energy for the yeast cells, heat, carbon dioxide and most importantly, alcohol.
The FVs are fitted with cooling jackets to control the maximum fermentation temperature which, if allowed to rise unchecked, would produce off-flavours .
